Easy Carrot Omelette with Just 3 Ingredients

Ingredients:

  • 1 carrot
  • oil
  • salt to taste
  • 2 eggs
  • black pepper to taste
  • 100g mozzarella

Way of doing:

Grate the carrot.
In a pan add olive oil, then the carrot, salt and stir.
Cover the pan and let it cook for about 5 minutes over low heat, then stir a little more and let it cook for another 3 minutes.
In a bowl add the eggs, black pepper, salt and beat well until smooth.
Transfer the carrot to the bowl and mix with the eggs.
In a pan, add olive oil, then the carrot and egg mixture, spread well over the entire bottom of the pan, cover and cook over low heat for 10 minutes.
Meanwhile, grate the mozzarella, place it on top of the mixture, then fold the omelet and leave until the cheese melts.
