Ingredients:

Cookies:

• 1 cup butter, softened
• 1 cup sugar
• 2 eggs

Cream Filling:

• 1 cup milk
• 1/4 cup sugar
• 2 tablespoons cornstarch
• 1/4 teaspoon salt
• 2 egg yolks
• 1 teaspoon vanilla extract

Chocolate Topping:
• 1 cup semi-sweet chocolate chips
• 1/2 cup heavy cream

Directions:

1. Cookies:
• Preheat oven to 350°F (175°C).
• In a large bowl, beat butter and sugar until smooth and creamy.
• Add eggs and vanilla extract, beating well.
• Stir in flour, baking powder, and salt. Mix until a dough forms.
• Shape the dough into balls and place on a baking sheet. Flatten each ball slightly.
• Bake for 10-12 minutes or until edges are lightly golden. Let cool completely on a wire rack.

2. Cream Filling:
• In a saucepan, mix milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture thickens.
• In a small bowl, beat the egg yolks. Gradually add a little of the hot mixture to the yolks to temper them, then return the yolk mixture to the saucepan.
• Cook for an additional 2 minutes, continuing to stir. Remove from heat and stir in vanilla extract. Let cool completely.

3. Chocolate Topping:
• In a microwave-safe bowl, combine chocolate chips and heavy cream.
• Microwave in 30-second intervals, stirring between each, until the mixture is smooth and fully melted.

4. Assembly:
• Place a spoonful of the cooled cream filling on the flat side of one cookie and top with another cookie to create a sandwich.
• Dip the top of the cookie sandwich into the chocolate topping.
• Let the cookies cool until the chocolate is firm.
